How to Prepare WHITE RICE
White rice is a very simple
Simple Rice Recipe
Ingredients:
- 1 cup of legend rice
- 2 cups water
- 1/2 tsp salt (optional)
- 1 tbsp butter or oil (optional)
Instructions:
- Rinse the rice under cold water until clear.
- In a pot, bring water to a boil. Add salt and butter/oil if using.
- Add the rice, stir once, then reduce heat to low and cover.
- Simmer for 18-20 minutes until water is absorbed.
- Remove from heat and let sit, covered, for 5-10 minutes.
- Fluff with a fork and serve.

How to Prepare Nigerian JOLLOF RICE.
Ingredients:
- 2 cups Legend parboiled rice
- 400g canned tomatoes or 4 large tomatoes, blended
- 1 large onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 3-4 tablespoons tomato paste
- 2 cups chicken or vegetable broth
- 1/4 cup vegetable oil
- 1 teaspoon thyme
- 1 teaspoon curry powder
- 1 teaspoon paprika or cayenne pepper (adjust to taste)
- Salt and pepper to taste
- Optional: 1 cup mixed vegetables (carrots, peas)
Instructions:
1.Rinse the rice until the water runs clear, then parboil for a few minutes. Drain and set aside.
2. In a large pot, heat the vegetable oil over medium heat. Add chopped onions and sauté until translucent.
3. Add chopped bell peppers and continue to sauté for another 3-4 minutes until softened.
4. Stir in the tomato paste, blended tomatoes, thyme, curry powder, paprika or cayenne pepper, salt, and pepper. Cook for about 10 minutes, stirring occasionally, until the sauce thickens and the oil begins to separate.
5. Add the drained rice to the pot and stir to coat it evenly with the tomato mixture.
6. Pour in the chicken or vegetable broth. Bring to a boil, then reduce the heat to low. Cover the pot and let the rice simmer for about 20-25 minutes, or until the rice is cooked and all the liquid is absorbed.
7. If using mixed vegetables, add them during the last 5 minutes of cooking.
8. Once cooked, fluff the rice with a fork and serve hot. Nigerian Jollof Rice pairs well with fried plantains, grilled chicken or fish, or your choice of protein.
